- 8 cups dark green salad mix, rinsed and dried
- 1 heirloom or beefsteak tomato, sliced
- 1 grated carrot
- 1 grated red beet
- 1 sliced golden beet
- 1 sliced cucumber
- 1/2 cup cherry tomatoes
- 1 tsp olive oil
- 2 tsp red wine vinegar
- Drizzle of balsamic vinegar glaze
Directions:
- Combine all ingredients in a large mixing bowl and toss gently.
- Serve, preferably family-style.
