Pumpkin Flan

Looking for a new fantastic dish for fall? Check out our amazing pumpkin flan!Combine 1 15-ounce can of pumpkin puree, 1 12-ounce can of evaporated skim milk, 1/2 cup sugar, 1/2 tablespoon pumpkin pie spice, and 1 and 1/2 cups of egg whites in a food processor or in a bowl with a whisk. Blend mixture until smooth -- do not overmix -- then pour into a lightly greased glass flan pan (the pan pictured is from La Creuset). Bake at 325 degrees Fahrenheit for 50 minutes or until firm in the center. Allow to cool for 5-10 minutes, then serve warm or chill for later use.This recipe serves 10 and contains only 104 calories and 0 g fat per serving!We garnished our flan with whipped cream and candied ginger, which add just 25 calories to each serving.
