Food News: Curry and Cancer
Curcumin, the ingredient which makes curry yellow, has blocked the growth of melanoma tumor cells and stimulated their death, according to laboratory experiments to be published in the August 15 journal Cancer. Researchers say curcumin appears to affect the NF-kappa B molecule, active in several types of tumors, including melanoma, and may also be useful in treating other cancers. Curry is a blend of spices and can be used to flavor rice, baked chicken and winter squash. Just a little goes a long way, so add to dishes slowly to find the right amount for you.
