Cole slaw is great, but this peach slaw is even better. It makes a great summer side salad.

Ingredients

  • 3 tablespoons nonfat plain yogurt
  • 3 tablespoons nonfat mayonnaise
  • 1 ripe peach, grated
  • 1 tablespoon sugar
  • 1/2 tablespoon vinegar
  • 2 cups shredded cabbage
  • 1/4 cup shredded carrots
  • 1/4 cup shredded red cabbage (optional)

Instructions

  1. Make the dressing by combining all ingredients, except cabbage, in medium-sized mixing bowl.
  2. At serving time add shredded cabbage and toss well.
