This is a healthy and delicious meal that incorporates a variety of wonderful flavors.

Ingredients

  • 3 cups cooked brown rice (1 cup rice, 2 cups water)
  • 12 ounce fillet of salmon, fresh or thawed
  • 1 cup chopped fresh or frozen peach slices
  • 1/4 cup chopped tomatoes
  • 2 tablespoons red onions minced
  • 2 tablespoons minced green onion
  • 1 tablespoon fresh chopped cilantro
  • 1 jalapeno pepper, seeded and minced
  • 1 lime, juice
  • 1 tablespoon grated ginger
  • 1 pound green beans

Instructions

  1. Start the rice cooking according to package directions.
  2. Preheat the oven to 375 degrees F.
  3. Place a 12-ounce fillet of salmon in a baking dish with a little water. Bake until the fish is no longer raw in the center, about 25 minutes. Remove from the oven.
  4. Mix the salsa ingredients: peaches, tomatoes, onions, peppers, cilantro, and lime, and top the salmon.
  5. Put the green beans in a covered microwave-safe container and steam on high for 3 minutes or until crisp-tender.
  6. Serve the fish hot with the rice and beans.
  7. Chef's Tips: Optional: serve a salad to the side.
