Ingredients
- 3 cups cooked brown rice (1 cup rice, 2 cups water)
- 12 ounce fillet of salmon, fresh or thawed
- 1 cup chopped fresh or frozen peach slices
- 1/4 cup chopped tomatoes
- 2 tablespoons red onions minced
- 2 tablespoons minced green onion
- 1 tablespoon fresh chopped cilantro
- 1 jalapeno pepper, seeded and minced
- 1 lime, juice
- 1 tablespoon grated ginger
- 1 pound green beans
Instructions
- Start the rice cooking according to package directions.
- Preheat the oven to 375 degrees F.
- Place a 12-ounce fillet of salmon in a baking dish with a little water. Bake until the fish is no longer raw in the center, about 25 minutes. Remove from the oven.
- Mix the salsa ingredients: peaches, tomatoes, onions, peppers, cilantro, and lime, and top the salmon.
- Put the green beans in a covered microwave-safe container and steam on high for 3 minutes or until crisp-tender.
- Serve the fish hot with the rice and beans.
