Bite of the Week: 3 Ways to Serve Corn

We're back with another Bite of the Week, and this week we want to focus on one of the most fun foods of summer: corn!Corn has no saturated fat, cholesterol, or sodium, and is a good source of vitamin C. It also contains some vitamin A and iron, though not a lot of each. A single serving has 3 grams of protein and 2 grams of fiber.Fresh corn is often at its best at this time of year, so let's find some fun ways to incorporate this tasty vegetable into your clients' eating patterns.One of my favorite ways to cook corn is on the barbecue. Just husk it, brush it with oil and a mix of your favorite spices, wrap it in foil, and grill it! Simply slice the kernels off of a few ears of corn and toss them with fresh sliced vegetables and a flavored vinegar and you've got a big bowl of summer!
