Tomatoes are skillet-roasted with oil and herbs for a warm side dish that is bursting with flavor and color.

Ingredients

  • 3 cups cherry tomatoes (assorted colors or red)
  • 1/4 cup diced green onions or chives
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh chopped basil or parsley

Instructions

  1. Heat a cast-iron skillet or another large skillet over medium-high heat. Add the oil and then add the tomatoes. Toss until they are a little golden on their skin. Add the green onions and cook for 5 minutes. Add the red wine vinegar and basil. Toss and serve hot. Season with fresh cracked black or pink pepper.
  2. Chef's Tips: Optional garnish: 2 tablespoons of freshly grated parmesan cheese.
