Ingredients
- 2 red yams
- 2 tsp olive oil
- 2 tsp maple syrup
- Salt and pepper to taste
Instructions
- Preheat oven to 410 degrees F.
- Rinse the yams well under running water to remove any debris.
- Slice the yams on the bias in 3/4 inch pieces. Place them on a greased pan or a pan with parchment paper or a silicon baking matt.
- Drizzle the yams with the olive oil. Place in the oven and allow to roast for 40 minutes. Half way through, turn them over.
- When they are done drizzle them with maple syrup. Season lightly with salt and pepper. Serve hot.
