This macaroni salad is a great side dish or a meal in itself.

Ingredients

  • 6 cups romaine lettuce
  • 2- 1/2 cups cooked macaroni
  • 1/2 cucumber, sliced or chopped
  • 1 large ripe tomato, cored and diced
  • 3/4 cup skinless baked chicken breast, cubed
  • 1 tablespoon olive oil
  • 3 tablespoons red wine vinegar
  • black pepper to taste

Instructions

  1. Assemble the ingredients for the salad in a large salad bowl in the order in which they appear, with lettuce on the bottom. Cover and refrigerate until ready to serve, up to one day.
  2. When ready to serve, add ingredients for dressing and toss well. Serve immediately.
