Ingredients
- 1 teaspoon canola oil
- 1 cup diced carrots
- 2 cloves garlic, peeled and minced
- 2 cups sliced mushrooms
- 2 eggs
- 2 cooked skinless chicken breasts, diced
- 2 cups green peas
- 1 cup sliced green onions
- 1 tablespoon light soy sauce
- 1 tablespoon sesame oil
- Garlic powder to taste
- Red pepper flakes to taste
- 3 cups cooked brown rice
Instructions
- Heat oil in a large, non-stick skillet over medium-high heat. Sauté garlic, carrots, and mushrooms. Add the eggs and scramble until done. Add the chicken, peas, seasonings, soy sauce, sesame oil, rice, and a little water. Cover and heat through. Top with chopped green onions.
- Serve hot.
