Why order take-out when you can make this healthier Chicken Fried Rice in one skillet?

Ingredients

  • 1 teaspoon canola oil
  • 1 cup diced carrots
  • 2 cloves garlic, peeled and minced
  • 2 cups sliced mushrooms
  • 2 eggs
  • 2 cooked skinless chicken breasts, diced
  • 2 cups green peas
  • 1 cup sliced green onions
  • 1 tablespoon light soy sauce
  • 1 tablespoon sesame oil
  • Garlic powder to taste
  • Red pepper flakes to taste
  • 3 cups cooked brown rice

Instructions

  1. Heat oil in a large, non-stick skillet over medium-high heat. Sauté garlic, carrots, and mushrooms. Add the eggs and scramble until done. Add the chicken, peas, seasonings, soy sauce, sesame oil, rice, and a little water. Cover and heat through. Top with chopped green onions.
  2. Serve hot.
