Mediterranean Chicken, Potato, and Arugula Dinner

This chicken dinner is absolutely scrumptious! Mediterranean seasonings, fresh lemon, roasted onions, and bitter greens combine with perfectly roasted chicken and potatoes!

Ingredients

  • 4 chicken thighs, bone in
  • 1 pound small Yukon gold potatoes, cut in quarters
  • 1 tablespoon olive oil
  • 1 tablespoon harissa seasoning (see notes below to make it or buy it in a store)
  • 2 tsp ground cumin
  • salt to taste
  • 1/2 onion, sliced thin
  • juice of one lemon
  • 6 cups arugula, rinsed and spun dry and ready to serve
  • 2 cups plain nonfat yogurt
  • 3 tsp minced garlic

Instructions

  1. Place the chicken thighs and potato wedges in a large mixing bowl. Add the olive oil, harissa, and cumin. Toss together. Place on a sheet pan with parchment paper.
  2. Top with the onions then squeeze lemon juice over all.
  3. Bake at 400 degrees F for 25 minutes.
  4. Meanwhile make the yogurt sauce: mix the garlic and yogurt together.
  5. When the chicken is done, top with arugula and the yogurt sauce.
  6. Enjoy!
