Texas Inspired Shredded Chicken Salad
Serves: 2 | Serving Size: 2 cups or 1 plate per person

Ingredients:

2 cups of shredded cabbage
1 tablespoon poppy seed dressing
2 tsp chopped parsley or cilantro
1/4 cup sliced red peppers
1/4 cup sliced celery
1 tablespoon diced hot or sweet bell peppers (red or green)
1 cup shredded cooked pulled chicken seasoned with a pinch each of chili powder, black pepper, garlic powder, thyme and oregano
1 sliced lime

Directions:

Toss all ingredients together in large bowl and serve immediately. Serves 2.
