Market SaladFarmers’ Market Salad
Serves: 8 | Serving Size: 1 cup

Ingredients:

  • 8 cups dark green salad mix, rinsed and dried
  • 1 heirloom or beefsteak tomato, sliced
  • 1 grated carrot
  • 1 grated red beet
  • 1 sliced golden beet
  • 1 sliced cucumber
  • 1/2 cup cherry tomatoes
  • 1 tsp olive oil
  • 2 tsp red wine vinegar
  • Drizzle of balsamic vinegar glaze

Directions:

  • Combine all ingredients in a large mixing bowl and toss gently.
  • Serve, preferably family-style.
