Broccoli Cheese Potato

Serves 1 | Serving Size: 1 potato

Here is a way to enjoy your veggies. This delicious baked potato is topped with steamed broccoli, sour cream, and cheese.
Ingredients:

5 ounce baking potato
1/4 cup non-fat sour cream
1 cup steamed broccoli
2 tablespoons light shredded cheddar cheese
1/4 teaspoon black pepper
Directions:
Wash potato under cold running water and pierce with a fork. Bake in the microwave until done, about 4 minutes.

Cut the potato in half lengthwise and fluff the inside with a fork. Place the sour cream and broccoli on the potato. Top with pepper and cheese.

Microwave on full power for 1-2 minutes or until heated through.

Serve hot.
Chef's Tips:
You can also bake the potato for about an hour in a 350°F oven.

This potato goes great with roasted chicken.
