Avocado Toast

Serves 2 | Serving Size: 1 slice per person

This is a delicious treat for breakfast, lunch, or dinner.

2 slices toast
1 small avocado, cut in half, remove pit and skin
1 tsp minced onion
lemon juice of 1 lemon
1 lettuce leaf, rinsed and cut in pieces
1 ripe medium tomato, rinsed, cored, and sliced
Toast the bread. Mash half of an avocado with the onion and lemon juice. Place the mashed avocado on the toast. Next top the avocado on toast with the lettuce and tomato. Serve immediately.
Chef's Tips:
Feel free to add more toppings as you desire!
Omnivores might want to add sliced boiled eggs or grilled fish.
