Broccoli Orzo Bowl

Low-sodium chicken broth and fat-free ricotta cheese don't detract from the wonderful, peppery flavor of our Broccoli Orzo Bowl. It's a great make-ahead side dish.

1 pound dried orzo pasta
2 teaspoons olive oil
2 tablespoons minced garlic
1 pound broccoli florets
1 cup low-sodium chicken broth
1 cup fat-free ricotta cheese
2 tablespoons basil or 2 teaspoons basil pesto
Black pepper to taste
1/4 cup grated Parmesan cheese
Cook orzo according to package directions, drain in colander with small holes or strainer. Set aside.

Meanwhile, heat oil in a large non-stick skillet over medium heat. Add garlic; stir 1 minute. Add broccoli and 1/4 cup water and cover, cook 3 minutes.

Mix chicken broth, ricotta cheese, basil, and pepper together in blender or food processor. Add to broccoli along with orzo and reheat all briefly.

Serve topped with Parmesan cheese.
Chef's Tips:
You can also substitute silken tofu for the ricotta cheese.
