Butternut squash, like other gourds, has a long shelf life and won’t spoil mere days after you bring them home from the market.

With very few added ingredients, butternut squash can be roasted and pureed into a delicious soup. Cook up a large pot of soup and freeze it in portions so it can be enjoyed throughout the season.
Reason #2: Butternut Squash is Full of Vitamins and Fiber
That bright orange color isn’t just pretty — it also signifies that this gourd is packed with vitamin A. There’s more than one day's worth in one serving of squash, and that same serving also has half your daily need of vitamin C.

Butternut squash can be added to your recipes to boost their vitamin, mineral, and fiber power. Freeze the remanding squash puree in 1-cup portions to use for future meals.
