Grilled Peaches

Roasted Peaches
Serve with grilled items like fish, chicken or pork - or with rice and salad for a light vegetarian meal.
4 cups fresh peaches cut in wedges
2 teaspoons brown sugar
dash cinnamon
juice of 1 lime
Toss all ingredients in bowl and then spread in nonstick baking pan. Bake in preheated 375 oven until peaches are soft, about 12 minutes. Place in bowl and serve warm.
These peaches are wonderful as a side dish for grilled items or as a snack or dessert.
Other fruits that can be roasted include mangoes, nectarines, plums and pineapple.
