Serves: 10 | Serving Size: 1/2 cup

Ingredients: ??

1 head of cauliflower, cut into florets
1 pound sliced red potatoes, with skin
2 tablespoons olive oil
2 cloves fresh garlic
1 onion, sliced
5 tablespoons flour
3 cups skim milk
1 ounce grated Parmesan cheese (1/4 cup)
Freshly ground black pepper
Pinch of nutmeg
1 tsp minced rosemary leaves
Dash of paprika

Directions: ??

Place cauliflower and sliced potatoes in pot of boiling water and cook for 10-15 minutes, until fork tender. Drain in a colander, then place in an 11x17-inch baking dish.

Meanwhile, heat oil in a nonstick skillet over medium heat. Add garlic and onion, sautéing until almost golden, about 3 minutes.

Shake the flour and milk together in a sealed container. Pour the mixture over the garlic and onions, stirring constantly. Bring to a boil, and, when thickened, add the cheese, black pepper, nutmeg, and rosemary.

Pour the sauce over the potatoes and cauliflower. Top with paprika and bake for 30 minutes at 350 degrees Fahrenheit.
