Bite of the Week: Creamy Pumpkin Pudding

The pumpkin fun doesn't stop and start with Halloween. This festive dessert comes together in a snap and is cute enough for any occasion.Easy Pumpkin PuddingServes: 4 | Serving Size: 2/3 cupIngredients:
  • 1 cup canned pumpkin or pumpkin puree
  • 1 package (4-serving size) sugar-free, nonfat vanilla ?pudding mix
  • 1 teaspoon pumpkin pie spice
  • 1 and 1/2 cups skim milk

Directions:

  1. Mix all ingredients together in a large bowl.
  2. Place in individual bowls or glasses and chill until set.

To present the pudding as pictured, add a dollop of whipped cream and a light sprinkle of pumpkin pie spice. Nestle a gingerbread cookie or two in the pudding and serve immediately.You can adjust the spice to your own taste by mixing nutmeg, cinnamon, cloves, allspice, and ginger until you find the proportions that work best for you.Nutrition Information:Serves 4.
