Roasted Chicken Thighs and Cherry Tomatoes
Roasting chicken thighs and cherry tomatoes together makes a nice dinner that is very easy because it takes advantage of unattended cooking time.
- 4 each chicken thighs
- 4 cups cherry tomatoes
- 1 tsp olive oil (extra virgin)
- 4 cloves garlic
- 1 sprig fresh thyme (or use dried)

Preheat the oven to 425 degrees.

Place the chicken thighs, cherry tomatoes, and garlic in a roasting pan or oven-proof skillet.

Roast uncovered for 25 minutes, stirring a few times.

Serve hot.

This dish goes well with a salad and brown rice or boiled potatoes.
