Chicken with RiceServes: 4 | Serving Size: 1 and 1/2 cupsArroz Con PolloIngredients:

  • 1 cup converted brown rice
  • 2 cups water
  • 3/4 cup cooked skinless chicken breast, cubed
  • 1/2 cup green peas
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped green onion
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • 1 teaspoon granulated garlic
  • 1/4 teaspoon paprika

Directions: Stovetop

  1. Place all the ingredients in a large pot on the stove and bring them to a boil.
  2. Lower the heat to medium, cover, and cook for 30 minutes.
  3. Once the water is absorbed, fluff the mixture with a fork and serve hot.

Directions: Oven

  1. Place all ingredients (except peas) in a large pan and cover with foil). Bake at 375 degrees until the water is absorbed (about 40 minutes).
  2. Add peas during the last 10 minutes of cooking.
  3. Allow to set for 5 minutes, then fluff with a fork.
