Microwave "jam"

Serves 10 | Serving Size: 2 tablespoons

Here is a recipe to make fresh fruit jam. It is a great way to use up leftover fruit that is past its prime. Use it to top toast, cereal, and yogurt.
Ingredients:

2 cups fruit, preferably berries, apples, or pears
2 tsp sugar
1 tsp water
juice of one orange or lemon
Directions:
Place all ingredients in a glass bowl and stir. Cover and place in the microwave on full power for 2 minutes. The mixture should come to a boil.

Mash lightly with a fork.

Serve hot. Refrigerate any leftovers promptly.
Chef's Tips:
Use fruits that lend themselves to cooking such as berries, apples, and pears. Avoid fruits like melon that would become too mushy. Makes about 1-1/4 cups.
