Forbidden Rice

While shopping for rice, I came across this gem. It is called “Forbidden Rice” . This whole grain Chinese black rice has a nutty taste, soft texture, and beautiful rich deep purple color.  It cooked in 20 minutes in the rice cooker and came out perfect.

My forbidden rice was paired with a fresh mahi fish dish that I made by topping a mahi fillet with thin-sliced fresh pineapple, fresh key lime juice, fresh orange juice, minced red onion, halved grape tomatoes and fresh ground ginger and baking in the oven.
